Here is the recipe for the Norwegian waffle recipe that started ActiveKidsClub.com. Great for an Outdoor Valentine picnic
Adapted from Five and Spice
Norwegian waffels (makes about 8 waffle rounds)
4 eggs
4 Tbs. sugar
2 1/2 cups flour
1-2 tsp. cardamom
1/2 tsp. salt
1/2 tsp. baking soda
4 cups milk or buttermilk or some combination of milk and sour cream
3 Tbs. butter, melted butter,
Jam, sour cream, for serving.
In a large bowl, thoroughly whisk together all the dry ingredients. Whisk the eggs into the milk and add bit at a time to the dry ingredients make a smooth batter. Stir the melted butter into the waffle batter. Set aside and allow batter to rest for about half an hour before cooking.
Heat your waffle iron to high. Cook the batter in the iron about ? cup at a time. Butter the waffle iron as needed during the cooking process. Transfer done waffles to a cooling rack so they don’t get soggy.
Serve in little sets of two to make sandwiches, or as whole rounds, with butter or jam (and sour cream or whipped cream if you wish). Vaffler are by far the best when they’re warm and fresh off the waffle iron. I put them in heating bag to keep them warm for a winter picnic.
