Apple pie

The season for apples is here. I hope you get the family out and visit an apple orchard this fall to pick some apples. However, if time or location does not allow you to pick them yourselves, make sure to buy locally grown apples where you live.

One of my favorite desserts here in North America is pie. I have started to understand that a lot of families have their secrets and a very specific preference on how an apple pie should taste and how the crust should be.

But don’t let the fear of not making the perfect pie stop you from making one. I hope that you make your own pie with the family so you can start making fond childhood memories with your kids.

Apple pie

1 baked pie shell (I have to be share a secret with you… I don’t make my crust, not because I can’t, but life is to short, and all that time could be spend playing outside )

I have found that I get better results when I prebake the pie shell before I fill it with the fruit filling.

Put the shell in the oven for 10 min on 400 F (200 C)

Apple filling

6 apples

2/3 cups 150 gr of sugar

2 Tbsp all purpose flour

1 Tsp lemon juice

1/2 Tsp ground cinnamon

1/4 Tsp ground nutmeg

1 Tbsp butter (cut into bits)

Peel, core, and slice apples have it in a bowl.

Add sugar, flour, lemon juice, cinnamon, nutmeg in the bowl. Mix well.

Put apples in the pie shell; make sure it is in a nice circle. Fill on the top of the pie filling dots of butter.

Put it in the middle rack of the oven on 350 F (180 C) for about 45 min.

(Norwegian) Apple cake

2/3 cup (150 g) Butter

2/3 cup (150 g) Sugar

3 Eggs

2/3 cup (150 g) Flour

2 tsp Baking powder

2 tsp Vanilla sugar

¾ cups (2 dl) Milk

4 -5 Apples

1 oz (28 g) sugar

1 oz (28 g) cinnamon

1 oz (28 g) Almonds (optional)

Mix butter and sugar together in a mixer till it is white.

Put one egg in at a time as you mix.

Add flour, baking powder, vanilla sugar and milk; mix well.

Peel, core and slice apples.

Chop almonds

Pour batter into a greased spring form; put your sliced apples and chopped almonds on the top making sure they are in the batter. Sprinkle with sugar,cinnamon and almond on the apples and almonds.

Put it oven on 350 for about 45 min.
