I often tell people that eating outside is an easy way to get your family outside. It does not have to be a faraway destination; it can be in your local park or your backyard. Instead of setting the table for dinner, you just bring it out to the park with you. Eat and play. The key to a picnic is to make it easy to organize after work and school. Yesterday was our first family picnic of spring, and this time we did not walk very far (only 2 minutes).
This time it was fish soup and baguette. There is fish soup and then there is fish soup that even kids will eat. I enjoy fish and making my fish soup so much I find it hard for me to now live so far away from the ocean.
Finding quality fish in Toronto is a challenge but I have found a few sources of good quality and fresh fish. I know that I am defiantly not eating locally grown food, but I do believe fish in the diet is important for kids and adult, and my kids love fish.
You need
1 clove of garlic
1 tbs olive oil
2 potatoes
1 carrot
2 tbs flour
2 tbs butter
2.5 dl (1 cup) whipping cream
1.7 L (7 cups) fish stock
200g (7oz) cod filet
200g (7oz) salmon
2 spring onion
For picnic
Spoon for soup
Bowls
Thermos
Napkins
Wet wipes is always a good idea
Blanket to sit on
Baguettes
Cut carrots, potatoes in to small squares and press the garlic. Melt butter in the pot and add the vegetables to the pot. Sauté the veg sprinkle the flour over vegetables. -Stir
Add the fish stock and cream over vegetables, and bring it up to boil, let it simmer till the potatoes and carrots are tender.
Cut fish in small pieces and add with spring onions to the pot. Let simmer for 5 minutes. Put in the thermos and head out for a picnic.
