Apple pie, apple strudel, crumble pie and apple cake. Different cultures, different recipes. In my home country Norway, we make apple cake to use up our apples. If you would like to try something different and don’t want to worry about getting the crust perfect, you should try Norwegian apple cake. It is quite a tasty treat.
Norwegian Apple cake
2/3 cup (150 g) Butter
2/3 cup (150 g) Sugar
3 Eggs
2/3 cup (150 g) Flour
2 tsp Baking powder
2 tsp Vanilla sugar
4 -5 Apples
1 oz (28 g) sugar
1 oz (28 g) cinnamon
1 oz (28 g) Almonds (optional)
Mix butter and sugar together in a mixer till it is white.
Put one egg in at a time as you mix.
Add flour, baking powder, vanilla sugar ; mix well.
Peel, core and slice apples.
Chop almonds
Pour batter into a greased spring form; put your sliced apples and chopped almonds on the top making sure they are in the batter. Sprinkle with sugar,cinnamon and almond on the apples and almonds.
Put it oven on 350 for about 45 min.
Serve it warm with vanilla ice cream.
