I’m not going to lie, I did not grow up with artichokes; it wasn’t a common sight at the grocery store in Norway. My first introduction was when I went to culinary school; I learned how to cook them and the art of eating them like a pro.

I haven’t thought about artichokes as a treat for my family until my daughter recently noticed artichokes at the store one day and insisted she wanted some. I think they are not only fun to cook, but fun to eat with kids.
